Main Ingredients
- 1 cup wild rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 teaspoon salt
- 0.5 teaspoon black pepper
1. Rinse the wild rice under cold water.
2. In a saucepan, heat the olive oil over medium heat.
3. Add the chopped onion, carrot, and celery. Sauté until softened.
4. Add the wild rice and stir to coat with the oil and vegetables.
5. Pour in the chicken broth, add salt and pepper, and bring to a boil.
6. Reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender.
7. Fluff with a fork and serve warm.
