Yellow Squash Casserole Recipe

Main Ingredients
- 4 cups yellow squash, sliced
- 1 cup onion, chopped
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup Ritz crackers, crushed
- ½ cup butter, melted
- to taste salt and pepper
Preheat oven to 350°F (175°C).
In a large pot, boil sliced squash and chopped onion until tender. Drain well.
In a mixing bowl, combine the squash, onion, shredded cheddar cheese, sour cream, salt, and pepper. Mix well.
Pour the mixture into a baking dish. Top with crushed Ritz crackers and drizzle with melted butter.
Bake for 25 minutes, or until the top is golden brown and the casserole is bubbly.
