  • 4 cups yellow squash, sliced
  • 1 cup onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup Ritz crackers, crushed
  • ½ cup butter, melted
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, boil sliced squash and chopped onion until tender. Drain well.
  3. In a mixing bowl, combine the squash, onion, shredded cheddar cheese, sour cream, salt, and pepper. Mix well.
  4. Pour the mixture into a baking dish. Top with crushed Ritz crackers and drizzle with melted butter.
  5. Bake for 25 minutes, or until the top is golden brown and the casserole is bubbly.
