- 2 medium zucchini cut into sticks
- 1 cup breadcrumbs preferably panko
- ½ cup grated Parmesan cheese
- 2 eggs beaten
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
Dip zucchini sticks into beaten eggs, then coat with breadcrumb mixture.
Place coated zucchini sticks on the prepared baking sheet.
Bake for 20-25 minutes, or until golden and crispy.
