- 2 medium Zucchini grated
- 1 cup All-purpose flour
- 2 large Eggs beaten
- ½ cup Parmesan cheese grated
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 2 tablespoon Olive oil for frying
1. Grate the zucchini and squeeze out excess moisture.
2. In a mixing bowl, combine grated zucchini, flour, beaten eggs, Parmesan cheese, salt, and pepper.
3. Heat olive oil in a frying pan over medium heat.
4. Scoop spoonfuls of the mixture into the pan and flatten them slightly. Cook until golden brown on both sides, about 3-4 minutes per side.
5. Drain on paper towels and serve warm.
