Main Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 2 cups sugar
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups grated zucchini
- 1 cup crushed pineapple, drained
- 3 large eggs
Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
In a large bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
In another bowl, beat together sugar, oil, eggs, and vanilla. Stir in zucchini and pineapple.
Gradually add dry ingredients to the wet mixture, stirring until just combined.
Pour batter into prepared loaf pan.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
