Ingredients 

Main Ingredients

  • 4 cups zucchini, finely chopped
  • 2 cups onion, finely chopped
  • 1 cup green bell pepper, finely chopped
  • 1 cup red bell pepper, finely chopped
  • ¼ cup salt
  • 2 ½ cups sugar
  • 2 cups white vinegar
  • 1 tablespoon celery seed
  • 1 tablespoon mustard seed

Instructions 

  1. Combine zucchini, onion, and bell peppers in a large bowl. Sprinkle with salt and let sit for 2 hours.
  2. Rinse and drain the vegetables well.
  3. In a large pot, combine sugar, vinegar, celery seed, and mustard seed. Bring to a boil.
  4. Add the vegetables to the pot and return to a boil. Reduce heat and simmer for 30 minutes.
  5. Pack the relish into hot, sterilized jars, leaving ½ inch headspace. Seal and process in a boiling water bath for 10 minutes.
