- 2 large zucchinis cut into fries
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 eggs beaten
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- to taste Salt and pepper
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
In another bowl, beat the eggs.
Dip zucchini fries into the egg mixture, then coat with the breadcrumb mixture.
Place the coated zucchini fries on the prepared baking sheet. Season with salt and pepper.
Bake for 20-25 minutes, or until golden and crispy. Serve immediately.
