Main Ingredients
- 4 flour tortillas
- 1 cup shredded cheese cheddar or your choice
- 4 eggs beaten
- 1 bell pepper diced
- 1 onion diced
- to taste salt and pepper
- 1 tablespoon butter
1. Heat a skillet over medium heat and melt the butter.
2. Add the diced bell pepper and onion, cook until softened.
3. Pour in the beaten eggs, season with salt and pepper, and scramble until cooked.
4. Remove the egg mixture from the skillet and set aside.
5. Place a tortilla in the skillet, sprinkle with cheese, add the egg mixture, and top with more cheese.
6. Place another tortilla on top and cook until the bottom tortilla is golden brown, then flip and cook the other side.
7. Repeat with the remaining tortillas and filling.
8. Cut into wedges and serve warm.
