Mediterranean Chickpea and Spinach Stew

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 can diced tomatoes (14 oz)
- 2 cans chickpeas, drained and rinsed (15 oz each)
- 4 cups vegetable broth
- 1 bag spinach (5 oz)
- to taste salt and pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until softened, about 5 minutes.
Stir in minced garlic, ground cumin, ground coriander, and paprika. Cook for another minute.
Add diced tomatoes, chickpeas, and vegetable broth. Bring to a boil.
Reduce heat and let simmer for 20 minutes.
Stir in spinach and cook until wilted, about 2-3 minutes.
Season with salt and pepper to taste. Serve hot.
