Ingredients 

Main Ingredients

  • 2 cups cooked rice preferably day-old
  • 1 cup pineapple chunks fresh or canned
  • 2 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 2 eggs beaten
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 cup peas
  • 2 tablespoon green onions chopped
  • 1 teaspoon sesame oil
  • to taste salt and pepper

Instructions 

  1. Heat the vegetable oil in a wok over medium-high heat.
  2. Add the diced onion and minced garlic, and sauté until fragrant.
  3. Add the diced carrot and peas, and cook until tender.
  4. Push the vegetables to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  5. Add the cooked rice to the wok and stir everything together.
  6. Pour in the soy sauce and sesame oil, and mix well.
  7. Add the pineapple chunks and chopped green onions, and stir to combine.
  8. Season with salt and pepper to taste. Serve hot.
