Instructions
1. In a large pot, melt the butter over medium heat.
2. Add the chopped onion and cook until translucent.
3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
4. Use a blender to puree the soup until smooth.
5. Stir in the heavy cream and season with salt and black pepper to taste. Heat through but do not boil.
6. Serve hot and enjoy!
