Ingredients

  • 400 g Spaghetti
  • 150 g Pancetta diced
  • 2 Large eggs
  • 50 g Pecorino Romano cheese grated
  • 50 g Parmesan cheese grated
  • 2 cloves Garlic minced
  • to taste Black pepper freshly ground
  • to taste Salt

Instructions 

  1. 1. Cook the spaghetti in a large pot of boiling salted water until al dente.
  2. 2. In a skillet, cook the pancetta until crispy. Add minced garlic and cook for another minute.
  3. 3. In a mixing bowl, beat the eggs and mix in the grated cheeses.
  4. 4. Drain the spaghetti and add it to the skillet with the pancetta. Remove from heat.
  5. 5. Quickly pour the egg and cheese mixture over the pasta, tossing to coat. The residual heat will cook the eggs.
  6. 6. Season with freshly ground black pepper and salt to taste. Serve immediately.
