Summer Corn Salad
A refreshing and easy-to-make summer salad with fresh corn, tomatoes, and basil.

Main Ingredients
- 4 ears corn husked
- 1 cup cherry tomatoes halved
- 0.5 cup red onion diced
- 0.25 cup fresh basil chopped
- 0.25 cup feta cheese crumbled
- 2 tablespoon olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Boil corn for 5-7 minutes. Let cool, then cut kernels off the cob.
In a large bowl, combine corn, tomatoes, red onion, and basil.
In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
Pour dressing over the salad and toss to combine.
Sprinkle feta cheese on top before serving.
