Ingredients

  • 4 ears corn husked
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion diced
  • 0.25 cup fresh basil chopped
  • 0.25 cup feta cheese crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions 

  1. Boil corn for 5-7 minutes. Let cool, then cut kernels off the cob.
  2. In a large bowl, combine corn, tomatoes, red onion, and basil.
  3. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  4. Pour dressing over the salad and toss to combine.
  5. Sprinkle feta cheese on top before serving.
