Ingredients 

Main Ingredients

  • 8 oz rice noodles
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • ½ cup chopped cilantro

Peanut Sauce

  • ½ cup peanut butter
  • 2 tablespoon soy sauce
  • 2 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

Instructions 

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a mixing bowl, whisk together all the peanut sauce ingredients until smooth.
  3. In a large bowl, combine the cooked noodles, shredded carrots, sliced bell peppers, and chopped cilantro.
  4. Pour the peanut sauce over the noodle mixture and toss to coat evenly.
  5. Serve immediately, garnished with extra cilantro if desired.
